Indian flavors spice up everyday cauliflower for a vegetable side dish that looks and tastes a step above average.

COOK TIME: 45 Minutes
Ingredients

2 tablespoons peanut oil
2 teaspoons McCoormick Mustead Seed
2 teaspoons sugar
2 teaspoons grated fresh ginger
1-1/2 teaspoons McCormick Ground Turmeric
1-1/2 teaspoons McCormick Cumin, Ground
1 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon McCormick Red Pepper, Crushed
1 medium head cauliflower (about 1 pound), cored and cut into florets
2 small bunches baby carrots (about 10 ounces), tops trimmed
2 tablespoons chopped fresh cilantro
1 lime, cut into 8 wedges

Directions
Step 1  Step 1:
Preheat oven to 425°F. Line a 15-by-10-inch baking pan with foil; set aside. In a large bowl, stir together oil, mustard seeds, sugar, ginger, turmeric, cumin, coriander, salt and crushed red pepper.
 
Step 2  Step 2:
Add cauliflower and carrots to bowl; toss to coat. Transfer to prepared baking pan. Roast about 30 minutes or until tender and vegetables begin to brown on edges, stirring twice.
 
Step 3  Step 3:
Transfer to a serving dish. Sprinkle with cilantro. Serve with lime wedges to squeeze over vegetables.
